Fasolakia (EVOO, onion, russet/sweet potatoes/tomatoes/green beans/parsley/spices. plated with fresno pulp drizzle, EVOO, israeli feta, heirloom tomatoes, S+P. Served with a slice of my fabulous homemade whole wheat bread with EVOO drizzle, S+P, and dash of fresh grated parmigiana. But as good as it was fresh, having it another 4-6 times is the best part. Personally,leftovers are the best part of this lifestyle change IMO.
