Welcome back to the kitchen we got Myra Burg in the kitchen today so you know we’re going to be doing something tasty and easy so Mom what is your like go-to favorite like not fast food but like restaurant meal the Greek restaurant and Whitby Greek restaurant and Whitby near

The 401 it is her favorite restaurant in the world they do chicken slovaki you get it on a big Greek salad oh delicious the number of times we’ve driven from Toronto to whippy just to eat this is kind of ridiculous I did used to live

There she did used to live there that is true it’s not like I oddly found it I mean that’d be still cool it would be I oddly found it yeah there you go nailed it that’s cool you got cred now Mom all right so I am going to show you how to

Make a super quick like week night chicken slovaki with a really quick and easy tziki cuz we’re a dip family are we not everything everything’s a dip dips all the way dips forever so especially tziki I know okay come on over just scared of me yeah yeah you’re in the

Kitchen that knife scared I know I’m not going to make the okay so the first thing we’re going to get to work on is the chicken so I’ve got four chicken breasts here that I’ve diced up and put into a bowl so anytime I’m cutting up

Chicken you want it to be about the like a good like couple bite siiz piece so like one chicken breast I usually cut it into like I don’t know five or six pieces yeah those are good chunks yeah good chunks okay Mom onto there would you add about three tablespoons of oil

Yes yes oh she got it you’re nailing it okay perfect so essentially when you’re doing a marinade especially like a night marinade you want to pack this baby full of as much flavor as POS a little bit more oh I think you don’t know what a

Tablesp I do know what a tablespoon is I’m like I’m feeling it I want who measures into the tablespoon this is the thing and I completely understand that especially if you’re baking but if you’re cooking you really can kind of go Loosey Goosey just stop now yeah that

Looks about good okay so I’m going to quarter up or or wedge up a red onion if you had a yellow onion that would work too that would be perfect now into there Mom would you also zest in this lemon you get use the zest yeah feeling good

It’s like you’re giving me the control I know okay you know how to zest you’re doing a great job yeah I know how to I know how to zest I know I’m a zesty person what that you are she’s a real zest for life that’s the Berg family

Thing so Mom what’s the rule when you’re zesting don’t scrape your fingers don’t scrape your fingers that’s rule number one but also don’t try not to get any of that white stuff oh the piff the piff there you go you know what’s up I like to eat the piff on oranges and stuff

Though it’s actually good it’s my favorite part if you could only see the floor director’s face at the same time as mine it’s mimicking mine all right well if you want to eat the fifth go for it but it is a little bit bitter so Mom is zesty and bitter we got

It okay uh I’m going to pop those onions right on into that bowl as well that’s looking beautiful I’m going to cut that lemon in I get to do a you get to do a tap nicely done mom I put my fingers on that’s okay okay we got it okay you want

To squeeze that lemon in sure okay now since this is a marinade I’m not worried about any Pips or seeds getting in but since this is a quick marinade we’re using lemon juice which is really really acidic something like wine you can marinade chicken in for a good amount of

Time but chicken’s kind of tender so since we’re using something really acidic like lemon juice we only want this to marinate for about like an hour maximum okay cuz otherwise it’s going to turn into like kind of a Ceviche okay like weird chicken ciche that’s what it

Did yeah no we don’t want that we want so not my normal 24-hour marinade roll not my you listen you rarely if ever have to marinade something for 24 hours but my mom’s like the longer the better a week and a half and you’re good to go

Better yeah all right add in that garlic for me so we’ve got a few cloves of garlic and I’m going to give you this to give that a mix up with all righty and then into there I’m also going to add in some dry spices so the first thing I

Need is a tablespoon of dry oregano you could also use fresh but to be honest this time of year Oregano’s kind of harder to find so I like the dry stuff it’s really nice and Lemony I’m also going to add in a teaspoon each of dried

Thyme which gives kind of again a lemony but a bit more Woody flavor add that in I like that smell I know me too some smoked paprika which I refer to as the bacon of your spice cupboard cuz it’s like kind of bacony right yeah it’s

Smoky SMY like bacon there you go nailed it add that on in and then we’re going to add in some chili flakes so I’ve got some chili flakes here you can add about half a teaspoon Mom what do you want more or less more more okay we’re going

To go in big oh that’s going to be spicy yeah that is looking perfect I’m going to season that up with some salt it all and again that looks great perfect perfect thank you so much I’m going to take this and pop this in the fridge for

An hour again since we use that lemon juice that’s going to be like getting into there really quick you smell your hands they smell like lemons okay they smell Beautiful right on I smell great okay Mom I’m going to hand this off to you so that is what it looks like we’ve

Taken that chicken and skewered it onto some skewers you want me to put this just pop it wherever you want nailed it okay so chaos in the kitchen when Mary and my were cook together um here we’ve got our chicken onto some nice skewers I’m going

To add a little bit of oil down onto a baking sheet to be honest you could totally bake it in there as well but I like to add these onions just to the bottom of the baking sheet so it’s going to kind of create a trivet for that

Chicken to go on top of so now I’m going to pop these babies right onto here those are going to roast up beautifully this is so licky split to be honest you can even marinate this chicken for even less time cuz it’s nice and punchy

But Mom would you take this and put this into the oven it’s at 450 bottom oven bottom oven 450 for 15 to 20 minutes you just want a nice Char on there these cook up super duper quickly you nailed it those are going to get nice and

Roasted up so we’re going to throw together now a really quick tziki okay Mom oh yum she loves a TZ we’re again dip family so into this bowl can you add in this Greek yogurt yeah so it’s about 1 and 1/2 cups of Greek yogurt I’ve also

Got half of a cucumber here that I have grated salted and then I let it sit in a strainer over a bowl all this liquid that just came out is going to concentrate the flavor of that cucumber make it a little I know this I know it’s

Nice and crispy now yeah so it’s not going to water up your taziki cuz you want a thick dip right yeah oh yeah it thick is the best thick is the best all right add that on in there you go yeah you want no Mani pambi dip in our house

No we want Good Dip all right now I’m also going to toss in some garlic into there and bright and Del I toss in a little bit of lemon zest a good amount of lemon juice as well keep giving that a mix for me mom then I’m going to toss

In some herbs I’ve got some parsley some mint I really like mint in mine and then Mom I really apologize but I’m putting Dill in it I know but you’re going to chop it up right she does not like Dill why don’t you like Dill cuz it’s it feels hairy it feels

Hairy she also hates uh chop it up I’m okay okay cool so chop it up nice and small like the like tinier hairs and you’re good to go yes yeah like you I got a cat what can I say she doesn’t know if it’s dill or eggs hair yeah all

Right that looks beautiful okay oh it’s so colorful I know so want to put that into your little dish oh that’s the dish that my mom made no big deal she’s going to pop it in there it’s the inaugural use oh man that looks delish mom nice

And thick and creamy oh it does it looks so good and I don’t know if uh the audience can smell this but this little chicken suaki with that beautiful marinade has cooked D wow the onion smells smell amazing pop those onto a platter serve it up with that Ted ziki

On the side maybe a little bit of a chopped up Greek salad and you have got a feast that you don’t even have to drive to Whit before exactly nice mom nailed it great hey Mary here what did you think drop your comments below and don’t forget to like And subscribe for

  1. I missed the show today and was so happy to see this video. I love all things made with chicken, especially the Mediterranean flavors.
