Black rice cooked in rice cooker with a bit of salt and a dash of evoo (to keep it from sticking on the bottom).
Lentils:
Chop 4 stalks celery, large onion, couple carrots, and some chilis.
Sweat veggies in evoo.
Add few cloves of mince garlic
Stir in 1/2 tsp each of cumin, coriander, turmeric, paprika, black pepper plus 1 tsp salt
Stir until spices bloom
Pour in 1 can (15 oz) diced tomatoes (with chilis, if you like)
Stir until bottom deglazed
Add about 6 cups water, bring to simmer
Add 1 1/2 cups red lentils
Add 4 cubed potatoes (optional)
Simmer, adding water as needed, until lentils are done and potatoes tender.
(Feel free to add any other veggies laying around that need to be used up as well.)
