Spring onions 1tbsp finely chopped 4. Salt to taste 5. Coriander leaves 1tbsp 6. Oil 1tbsp# METHOD:Serving Size: 1Crack the eggs in a bowl. Add salt, spring onions and coriander leaves and beat them with a fork until they are all combined.Melt butter in a skillet on low medium heat. Add the eggs and cook without stirring until the edges begin to set.With a silicon spatula push the edges toward the center of the pan so the uncooked eggs move to the edge.When the eggs are somewhat set but still soft, place the cheese in the center.
