Last week I canned a few jars of beetroots. In some of the jars I added a bit too much fruit resulting in them not being covered by the vinegar mix. Will this affect how long they will last?

    Whaaaaaat is that jar. Did you reuse a commercial jar? What was your canning recipe and process?

    You cannot can with a reused commercial jar and lid. You’re going to end up killing someone.

    Are you keeping these in the fridge or on a shelf?

    If they’re in the fridge, top up the vinegar. They’ll keep for a while.

    If they’re on a shelf, the jar you used is not considered safe for shelf-stable canning.

    What recipe did you follow?

    That jar will affect how long you can keep them outside the fridge
    Edit: the time is zero moment, just to be clear.

    Weird, that doesn’t look like a mason jar with a 2 part lid, which are the only jars approved for home canning.
