The actual recipe is in one of the pictures but i tweaked it to my likes. My version below.

Zucchini, 2 green bell pepper, 2 red bell peppers, two sweet orange peppers, 5 green onions, a handful of Kalamata olives and green olives and cannellini beans. Add in olive oil, fresh lemon juice, ground cumin, oregano, crushed red pepper, minced garlic and parsley. I didn’t have any mint and i didn’t have fresh parsley so I used my dry parsley and skipped the mint. I also ended up adding some red wine vinegar. Top with feta cheese. Planning for this to be my lunch for a few days.
