This is a great replacement for mashed potatoes if you are watching your carbs.

Ingredients
1 medium head of cauliflower
3 tablespoons of cream cheese
2 stalks of green onion
2 tablespoons of butter
2 tablespoons of sour cream
Salt and pepper to taste

Directions
Using a sharp knife, cut the florets off the head of the cauliflower. Cut into
pieces about the same size and add to salted, boiling water. Cover the pan
and cook for 5 – 7 minutes or until the cauliflower is fork tender. Drain in a
collander and set aside.

Clean 3 or 4 cloves of garlic and add to an oiled pan. Placed in a 350 degree
oven for 10 minutes. Remove the pan and add the cooked cauliflower to the pan and return to the oven for another 10 minutes.

Empty the contents of the tray into and large bowl. Add salt and pepper, cream cheese, butter, and sour cream. Stir to mix. Using a stick blender or potato masher work the cauliflower mixture to the consistancy you like, either chunky or smooth.

Add slice green onion and serve.

When it gets near boiling add a little salt I usually add about a teaspoon Once the salted water is boiling add your cauliflower carefully to avoid burning yourself in the pan or on the boiling water foreign And let it boil for five to seven minutes testing it occasionally to see if it’s fork tender Once it’s cooked take it off the heat and pour the cauliflower through a colander and let it drip for a little while I’m going to prepare a whole pot of garlic to cook but you really only need three or four pieces for this recipe All right Heat your oven to 375 and put your garlic on an oiled pan and stick it in the oven for about 10 minutes make sure the garlic doesn’t burn once that’s done put your cauliflower on the same pan and mix it in with the garlic Put the pan in the oven at 375 and let it cook for another 10 minutes you’re not trying to Brown it you’re just trying to get some of the moisture out cauliflower into a large bowl Add two or three tablespoons of softened cream cheese the bowl add two tablespoons of butter add a couple tablespoons of sour cream to the mixture assuming the mixture is not still very very hot if it is I would use creme fraiche instead since it won’t curdle under the Heat good
