I smoked these for 4 hrs then finished them in the crockpot for 3.5 hrs. I only used salt, actually I dry brined them over night. After they were cooked I let them rest for about 1 hr. They were literally meat jello!
I know the crockpot was cheating but there was no point in keeping the smoker on 🙃.
