So back in 2021 I went on a trip to Spain for a little bit (vaccinated and masked up, took every precaution) and I sadly don’t speak fluent Spanish. There was this breakfast pastry I had one day on a walk through Salamanca and fell in love with it, but I have no idea what the name is or how to replicate it I think it is from my own research an ensaymada with cream in between but I wanted to check if it was in fact what I had tasted. It was light and airy and even the cream within was not at all heavy.

Ensaimada. A specialty of Mallorca. The thing that makes it distinct from other pastries is it is made with pork lard.
