Filled to about 5cm (2 inches) under the top and after 10 minutes cool down, I peaked and it was boiling hard inside the glass and liquid was shooting out.. Lid too loose?

Isn’t the water supposed to be over the top? And are you using a grate on the bottom of your pan for the jars to sit on?

What recipe are you following. A 2 inch headspace is very unusual for any approved recipe.
