Rustic Umami Mushroom Stew

    * 250g closed cup mushrooms
    * 250g peeled white potatoes
    * 200g carrots
    * 70g celery
    * 30g dried mushrooms
    * 5 garlic cloves
    * 4 tablespoons dark soy sauce
    * 1 tablespoon tomato puree
    * 1 medium white onion
    * 1 teaspoon white miso paste
    * Salt & pepper
    * Olive oil
    * Optional herbs to garnish
    * Optional bread to dunk

    ###Instructions

    1. Pour 500ml hot water over dried mushrooms & cover tightly for 20-30 minutes
    2. Sautè diced carrots, celery, onion & potatoes in a generous glug of olive oil for 8-10 minutes
    3. Drain liquid from dried mushrooms & leave aside
    4. Chop both types of mushroom into thin slices, add to the pan alongside minced garlic
    5. Season with salt & pepper, fry for 5-6 minutes
    6. Pour in mushroom stock, alongside tomato puree & soy sauce, mix well
    7. Bring to simmer for 25 minutes, stirring frequently.
    8. When stew has thickened & potatoes are tender, turn off heat & stir in miso paste

    Looks good but I don’t like the name. Rustic Umami sounds like a severe medical condition in the genital region.
