Today I made a chopped salad with a homemade dressing.
The dressing: a whole peeled lemon, a few cloves of garlic, half a shallot, champagne vinegar, fresh parsley, sumac, lemon zest, lemon salt, hot paprika, and a little bit of Trader Joe’s sofrito spice blend for zestiness. I blended this up with an Italian olive oil. This had a nice thicker texture.
The salad: canned chickpeas, Persian cucumber, romaine lettuce, cherry tomato, watermelon radishes, ricotta salata (a crumbly aged ricotta), and some pistachios.
