I brote the brine and content to a boil and sterilized the jars and lid. But I did not use any Vinegar, are these shelve safe?

    Ok, I don’t know if there are any safe canning recipes for kimchi as far as I know. If there is such a recipe and it’s proven to be from a safe source, use that instead of winging it! Winging it + canning = gambling with your health, losing = sickness or (rarely) possible death.

    this is more r/fermentation territory. kimchi isn’t really a good candidate for shell stable canning and I don’t know of any safe tested recipe for it.
