The lids all snapped down and I can hold the jars in the air by the edges of the lids.

Ph tests between 5 and 6 on PH strips.

This was my first experiment in pressure canning.
I followed a recipe but, I’m horrible at judging measuments such as lengths/heights etc.

I’ve since ordered a de-bubbler with height gauge.

Is this amount of headspace likely to cause a dangerous product?

Even if I have to discard it, I guess it’s a cheap lesson.

    They have hand tools you can purchase to measure headspace but pressure canning need to be done by the book exactly, so for me I wouldn’t not use it. If it boiled over during the canning process and you filled it up correctly with the correct head space, who knows if its even sealed properly? Hard pass for me.

    Just for future reference, you can also use the jar threads for accurate headspace measurements. I think the Ball books have a photo that shows what to look for.
