Kale salad with chicken and farro

    Out and about all day yesterday and I really missed my greens

    Salad:

    * Shredded kale and brussels
    * Anchovy lemon vinaigrette: a clove of garlic, a bit of dijon, equal parts EEOO & lemon juice, plus a few anchovies blended together until smooth
    * Fresh shredded parmesan
    * Chicken bites – I cut chicken breast into bite sized pieces and marinate them with low-sodium tamari, worcestershire sauce, and a bit of blackened seasoning for 30 minutes. Then cook in the air fryer at 380 until they’re crispy on the outside

    Served with a side of farro. Yum!
