These salad wraps are packed with protein, green veggies, and chips for crunch!
Broccoli and Quinoa Ranch Salad Wraps
Serves 4
🥦 8 oz broccoli florets, finely chopped
🥦 3 cups finely shredded romaine lettuce
🥦 1 cup shredded sharp cheddar cheese
🥦 1 cup cooked quinoa
🥦 1/2 cup store-bought ranch dressing, more or less to taste (or make Greek 🥦 yogurt ranch (recipe below)
🥦 4 large tortillas or other wraps
🥦 chips of choice (I like Trader Joe’s Chili & Lime Rolled Corn Tortilla Chips)
1. Combine the broccoli, lettuce, cheese, and quinoa in a large mixing bowl. Add the ranch dressing and toss everything together to combine.
2. Divide the filling between tortillas and add the chips. Roll tightly to enclose.
If you want to make your own Greek Yogurt Ranch Dressing, whisk together these ingredients:
🥣 2/3 cup plain nonfat Greek yogurt
🥣 1/4 cup mayonnaise
🥣 2 tablespoons finely chopped chives
🥣 2 tablespoons lemon juice
🥣 1/2 teaspoon onion powder
🥣 3/4 teaspoon kosher salt
🥣 1/2 teaspoon garlic powder
🥣 black pepper

My current favorite salad wrap is so full of crunch a lot of it comes from broccoli fettes that I chop up until they’re teeny tiny and so crunchy there’s romae lettuce and quinoa in there too but the best part of course is chips on top
