My sister made these like 3 days ago, called them quick pickles, they have been in a shelf for the last three days but I’m not sure if they are safe to eat, it has bubbles, and smells quite strongly, I also heard this kind of pickle need to be refrigerated, so any help/advice would be greatly appreciated

    I’ve only heard of quick pickles being refrigerated, or more often, eaten straight away.

    These jars also aren’t considered safe for canning.

    Bubbles aren’t necessarily a red flag, but I personally wouldn’t want to eat these.

    No they are not safe. Quick Pickles go straight into the fridge after they have cooled.

    She improperly Fermented something. Toss it all.

    I would ask what ratios she used.

    I think it’s likely safe tbh. People lactoferment cucumbers all the time.

    I wouldn’t leave them out for months and months, but 3 days would be within my realm of tolerance. Especially if it had ~1tbs salt.
