I guess I spend my spare time canning. Chicken, ground beef, and beef this weekend.

What’s your favorite cut of beef to can? It’s the first time I’ve canned beef that wasn’t hamburger and I tried sirloin tips, round eye, and brisket. The brisket was definitely a mistake. Way too fatty.

And I canned the fat. Does anyone do anything with the fat? I feel like something can be done with it. But what?

    Beef tallow? Lotion or body butter. Chicken fat? No idea.

    Looks like you’re about halfway done, keep going! 🤣. I’m not a big fan of canned hamburger. The texture is just wrong to me. But that’s me. As for other beef I use stew beef for ingredient canning just plain beef for enchiladas or whatever, or for something like the meal-in-a-jar beef street tacos canning recipe as found in the Ball New Book of Canning. Simple and quick prep for a mid-week dinner.

    I haven’t canned beef fat but I keep it in the freezer for sausage making.
