Inspired by u/the_mango_tree_owl I made a bean soup and topped it with leftover shrimp. And a side of carrots and cucumbers.

The soup – I made some pinquito beans. And then added them to an improvised soup base. (I am bad at recipes and good at guessing and putting stuff together).

The soup base had some onions with baharat, a smoky chilie, Kashmiri chilies, ginger powder, garlic powder, tomato paste, a little bit of whole peeled tomatoes, a splash of vinegar, and preserved lemon paste. I simmered the beans in the broth. And then added some kale for greens. And topped with a lime curried shrimp.

Turned out yummy. Will make this soup again! The preserved lemon added a lot of brightness. The pinquito beans cook fast without any soaking.
