This has been my go to breakfast for months and I’m not tired of it! The only thing I switch out is the fruit, berries for antioxidants or banana for potassium (those are my staple fruits) but you can add anything you like

•preheat pan on med
•slice of sourdough from a round (wide slice so I cut in 2 to toast)
•olive oil and sea salt butter on toast (optional)
•generous pour of EVOO in pan
•handful of baby spinach, cook until wilted
•2 eggs, yolks broken, mix spinach in and somewhat shape into toast size
•salt & pepper
•recent addition- finished with shreds of parm that was leftover from a dinner recipe
•side of fruit, voila!

Sourdough Bread: healthy carb, prebiotic
Eggs: protein
EVOO: unsaturated fat
Spinach: fiber & vitamins
Fruit: healthy natural sugar, and diff vitamins depending on which ones you choose!

This is my fav balanced breakfast though I’ve really been wanting to try new things like shakshuka! What are your go-to balanced breakfasts and/or which ones do you want to try?

    I have kind of high cholesterol and someone told me to stay away from eggs. I’m confused are eggs okay? Because I love eggs. I’ve been eating mostly salads for the past two weeks to lose weight/bring my cholesterol down. If eggs are fine then about to make so many omelettes with spinach added haha.
