Slow Cooking Vegetable, beef and barley soup March 2, 2024 Hearty soup perfect for a cold day. by hypno_tode 2 Comments hypno_tode 9 months ago Vegetable, beef, and barley soup:16 oz hamburger or stew beef14.5 oz can petite diced tomatoes1 packet Knorr French Onion recipe mix/soup1 tsp Italian seasoning8 cups beef broth (I use Better Than Bouillion)4 cups water – omit for thicker, more stew-like1/2 cup red wine, optional1 cup onion (I used white)8 oz mushrooms, sliced and lightly chopped3-4 ribs celery, diced4 med carrots, diced1 potato, Russet, diced1/2 cup frozen green beans, optional1 cup barley (pearl barley, quick ok)Few sprigs of thyme, if desired, or 1/2 tsp driedSalt and pepper, to tastePreparation:Brown hamburger or stew beef in skillet.
