After adjusting from doing the water bath pico yesterday, I canned up some shredded chicken today. I double checked the headroom, and it makes the half pints look pretty empty. But it looks like nothing leaked or had any failures so far.
I used 6 whole thighs for these, and pulled the skin off before pressure cooking them. The leftover bones were roasted in the oven and are now in a pot with the skin, old bones from rotisserie chicken, and lots of kitchen scraps to make stock.
