I was over enthusiastic while roasting vegetables tonight, so decided to throw everything together to make dinner. If the picture is awful, the meal was absolutely delicious!

– 1 large sweet potato
– 1 large red bell pepper, diced
– 1 large yellow bell pepper, diced
– 1 bunch medium asparagus, cut in half an inch pieces
– 4-5 dry shallots (or 1 medium red onion), diced
– 1 or 2 tbsp dried oregano, to taste
– 1 or 2 tbsp dried thyme

– 85g orzo

Dressing
– 1/2 cup greek yogurt
– half a lemon juice
– 2 tbsp EVOO
– 1/2 cup fresh parsley, chopped

Preheat oven to 425F. Swirl the sweet potato dices in a bowl with EVOO and the dried oregano and thyme. Spread on a pan and roast until they start to get soft, about 20 minutes.

Put all the other vegetables in the bowl and add the sweet potato dices. Mix all the vegetables together to coat them with the herbs. Spread on the pan and roast until done to your taste (30 minutes or more).

Meanwhile cook the orzo, and drain.

Combine the vegetables and pasta in a bowl.

Whip the dressing ingredients together and pour over the salad.

Serve topped with roasted chickpeas.
