On the island “Snilstveitøy”, and just outside is the amazing restaurant Iris. (About 2 hours in speedboat from Bergen, Norway). Me and my better half went in July, and saw no one had posted this yet. The experience itself, but also the food is really worth a try!
Unfortunately I don’t have the name of each dish, but the names were very conceptual and not descriptive.
They did a really great job at getting local resources to create a lot of the dishes. The dishes felt pure, and really creative in many ways. Some of the tastes still linger on my tounge.
Ps. The salmon eye (owned by the salmon farming company), is not very popular in the area. The locals are quite hateful towards it, and you will find that not everyone will be happy for you to enjoy the restaurant. This is not to say the people running the restaurant isn’t focused on sustainability and are doing great – but the backdrop of it, is that they are being used by the salmon farming companies as sort of “greenwash”. My uncle is from there, and my cousin lives there… But, they bring a lot of business in this remote area of Norway and is doing some great things as well. But I feel it’s important to have the full perspective. The people running the restaurant isn’t part of the company, but they are collaborating.
