Chickpea wraps. $17 dinner

    Recipe: 1/2 red onion. 1 lime. 2 garlic cloves. Red wine vinegar. Maple syrup. Cilantro. Chickpeas. Cauliflower. Garlic & onion powder. Ground coriander. Dried thyme. Oil. Chipotle Adobe sauce peppers. Unsweetened yogurt. Lettuce.

    Slice half red onions give them a cold bath to make them less potent. When ready, dry the onion & Vest half lime & also juice it. 1/4 cilantro. & Garlic. Mix & store in the fridge.

    1/2 cup yogurt or a little more. 2 Chipotle peppers with some of the Adobo juice. 1 tbs red vinegar. 2 tsp maple syrup. 1/4 cilantro. You can add water or more yogurt to taste and consistency. Zest of the other half of lime and juice. A Garlic, I used my zest to grate it.

    2 sheet pans. (You could use one) cauliflower and onion powder, thyme mixed in oil. After 20 minutes in 425F, take it out and mix it up for another 10 minutes.

    Chickpeas coated in oil and salt. Bake for 20 minutes at 425F. Take it out and coat with garlic powder and coriander and mix.

    Mix the chickpeas and cauliflower if you used 2 sheets to bake. Add some Chipotle sauce and toss them to coat.

    4 pita wraps. This recipe will make 8. I made mine with 3 cups of flour. 3 tsp baking powder. 3/4 cups of yogurt. Mix it into a ball and cut it in 8 balls. Roll it out and heat up on an oiled cast iron until it looks toasted.

    Grap a pita slather the Chipotle mixture. Sprinkle a few onions. A bit of lettuce. The chickpeas and cauliflower. Top with some more Chipotle sauce or not.

    $17?! For that? Don’t get me wrong it looks delicious but that’s a lot of money. Are you including the total price of all the ingredients (for example the price of the whole bottle of vinegar or the whole tub of yogurt instead of just the price of the portion you used) or something?
