INGREDIENTS AND RECIPE:

1 onion
Olive oil.
3 cloves of garlic.
1 carrot.
1 eggplant
Paprika.
3 tablespoons soy sauce.
Salt.
Black pepper.
4 tablespoons of tomato paste.
Green onions.
50 grams of butter.
1 tablespoon flour.
250 ml milk.
Turmeric.
200 grams of pasta.
1 tablespoon salt.
100 grams of cheese.

1. Finely chop 1 onion and fry in olive oil.
2. Finely chop 3 cloves of garlic and fry with onions.
3. Coarsely grate 1 carrot and fry with vegetables.
4. Finely chop 1 eggplant and fry with vegetables for 7 minutes.
5. Add paprika and 3 tablespoons of soy sauce.
6. Salt and pepper, add 4 tablespoons of tomato paste and mix well.
7. Finely chop the green onions and fry in olive oil.
8. Add 50 grams of butter, 1 tablespoon of flour and mix well.
9. Add 250 ml of milk, turmeric, salt and mix well.
10. Add 200 grams of pasta, 1 teaspoon of salt to boiling water and cook for 15 minutes.
11. Finely grate 100 grams of cheese.
12. Place pasta on a baking sheet, pour in cream sauce and mix well.
13. Distribute the fried eggplants evenly on top and sprinkle with cheese.
14. Bake at 200°C / 392°F for 10 minutes.
