    RECIPE:

    Ingredients: Cherry Tomatoes, Red Onion, Zucchini, Cucumber, Edamame, Lupini Beans, Zatar Seasoning, Harissa Seasoning, EVOO, Quinoa, Hummus (no seed oils in hummus, I use Oasis brand which has clean ingredients)

    1) Cut tomatoes, dice red onion and zucchini. use around 1/3 of the onion and however many cherry tomatoes you feel like. Toss these in a bowl with light EVOO and HEAVY Zataar and Harissa seasoning. Bake in oven @425 for 20 min.
    2) Cook 1/4-1/3 cup dry quinoa
    3) Cold ingredients – Dice part of the cucumber and eat the rest now. Put cucumber, lupini beans and edamame into your bowl. Scoop of hummus into bowl
    4) When quinoa done scoop it onto the hummus
    5) When roast veggies done scoop into middle of bowl
    6) enjoy!
