Lentil (boil with salt for 10-20mn)
Sauté onion + tomatoes in olive oil

There is something called Sambar in South Indian food. Try to learn to make that that uses lentils.

It looks great. You don’t need rice. Lentils are an excellent side in place of a starch like rice or pasta. Especially if you’re looking to do a lower carb diet, subbing in legumes is a great choice. Of course, since they are also a good source of protein, you could lose the meat, and make legumes the star of a vegetarian dish. They are super versatile. I hope you enjoyed them!
