It’s just organic strawberries, 20% sugar, and some regular pectin. I cored, sliced, then processed the strawberries and then cooked them. They I’d say more about how I cooked it, but being that I’m aiming to make a business out of specialty pb&j’s made with high-quality butters and jams/jellies, I need to secure an improvement patent first before I can say how I cooked this jam.
I wish I’d added more pectin (I used 1 tbsp per cup of jam, same ratio I used for the jelly), as it does have a bit looser of a set than the grape jelly I made did; but it’s still set as a jam, as evidenced by the spoon scoops visible in the video lol.
It came out redder than traditional strawberry jam (basically the same color as the fruit imo), but I promise there’s no food coloring! And it tastes pretty darn amazing, tasting like just the actual fruit with a small taste of the sugar to compliment it.
