I found this cut of beef in a burrito bowl I ordered at Chipotle. As far as I know this was the only piece that was like this. I think the bumps could be fat, or some other connective tissue like gristle, but I wanted another opinion. In the 3rd picture, where I cut the piece open, you can see how the bumps extend down into the meat. The beef is likely a cut of round, or something else from the leg section since that's mostly what Chipotle uses. They cook their meat on an open flat top grill. Not sure what seasoning or marinades they use. After piece cooled to room temperature these bumps on the surface smoothed out and became almost unnoticeable. I didn't eat this piece obviously. Someone else wondered if it could be Bovie TB, which really freaked me out, and from what I found that's unlikely since that effects the chest and ribs of the animal. Also from what research I did, Chipotle gets their beef from Australia where Bovie TB was eradicated nearly 3 decades ago. Any insight would be helpful.
