authentic italian fettuccine alfredo (fettuccine al burro). one of the easiest pasta recipes i’ve made and no cream needed!

  1. recipe:

    – fettuccine pasta (dried or fresh)
    – butter
    – parmigiano reggiano (the real one, not some cheap knockoff)
    – black pepper (optional)

    prep:

    – boil pasta in salted walter according to package instructions
    – while the pasta boils, grate the parmigiano cheese
    – DO NOT DRAIN the pasta, put them directly on a large bowl with unmelted butter
    – mix the pasta with the butter and the grated cheese. put some black pepper if you want.
    – add pasta water in the mix to emulsify and create a creamy sauce
    – enjoy!
