Got these cool bento boxes cause I am tired of cooking and run out of time to sit and eat a whole meal at work. This week I cleaned out my fridge of leftover jars and wheels of cheese.

Bottom portions: carrots and grape tomatoes
Middle portions: English cuke and homemade hummus (America's test kitchen recipe)
Top left portions: on the left box it's manchego, on the right box it's trader joes cracked olive salad
Top right portions: 1/4 c pecans and a few chocolate covered dried figs (that's it brand)

I will also pack a handful of whole wheat crackers to go with the cheese/olive salad.

What should I add next week?

    I do this for lunches as well. Often what you have here, sometimes pickles/pickled okra or other veggies, a hard boiled egg, roasted chickpeas, snap peas, baba ganoush or tzatziki instead of hummus, or some Greek yogurt.
