This is a raw milk cheese make with sheep milk (lait de brebis. It is from the village of Martinville in southeastern Québec. The texture is firm, crumbly but not dry. The taste is strong, nutty and peppery. Smell is strong but lot overpowering.

Overall, a rustic cheese that's good by itself, but not very versatile (I wouldn't cook with it, there are other sheep cheeses more suitable for cooking). Good for a snack, and pairs well with amber and brown beers.
