    – Cut pancetta into small pieces and cook
    – Add your diced carrots, celery, and onion (smaller dice the better, or food processor works)
    – Cook veggies with pancetta for a few minutes.
    – Add ground beef and/or pork (I prefer a blend of both)
    – Mashing the meat up into small pieces, cook until browned
    – Season meat if you’d like. I tend to add dried oregano
    – Add strained tomatoes or hand crush some San Marzanos!
    – Add some additional water with the tomatoes
    – Let simmer for a couple hours (longer the better, but at least an hour and a half)!
    – Enjoy with some big pasta, ideally tagliatelle, pappardelle, or rigatoni
    – Garnish with Parmigiano Regiano and parsley/basil if you want!
    – And of course salt and pepper to taste
