I tend to find this in harder, fancier cheeses. They don’t have a taste, just crunchy. I typically eat around it. I don’t think it’s mold

They’re most likely calcium lactate crystals, also known as “cheese crystals.” **They are completely safe to eat**, and usually signify that a cheese is flavorful and well-aged. Calcium lactate crystals form naturally during the aging process and are most commonly found in aged cheddars.

It’s a mix of calcium lactate, tyrosine and leucine; there are definitely different kinds of crystals visible.

Try Trader Joe’s ‘unexpected cheddar’ it’s inexpensive, has the crystals, and so delish!!

Apparently border services didn’t catch *all* of the fentanyl that’s being smuggled into N America hidden in cheese… 😞

  8. Technically they are called tyrosine crystals which is the calcium build up

The real question is, why are you just eating a block of cheese?

Theyre what you want. Tiny little flavor bombs in the cheese.
