Just got it to 46 Celsius in the oven for a reverse sear and it has all this spotty white patches??

    Any chance you happened to sprinkle coarse grained salt exactly where each of those white spots is?

    don’t use coarse grained salt for meat or fish. use fine grained salt and salt at least an hour before leaving it on a rack in the fridge.

    My God!!! It’s moldy I bet it smells soo bad

    Coarse salt will make those white spots appear (I know because I’ve had that happen once before)

  5. Partially dissolved salt.

    Mold won’t suddenly appear in the oven.
