I like this because it’s crunchy, cold, sweet, and salty. Really nice for snacking because you don’t have to reheat it.
To make 3 servings:
81 g carrots, 78 g edamame, 83 g red bell pepper, 112 g dry weight fiber gourmet light spaghetti, 160 g snow peas, 162 g tofu, 20 g cabbage (mainly for color),
dressing: 1 T white miso, 2 T sesame oil, 2 tsp grated ginger, sweetener to taste, 1/4 c soy sauce, squeeze of lime juice, dash of siracha
