I picked up some ground venison. I am planning on making my wife and I venison burgers this weekend. I work frequently with beef, pork & poultry. I was wondering if there’s any difference in seasoning it? I usually just use black pepper, sea salt and maybe some garlic. Also, what cheese would go good on the burger? Thank you in advance

    Deer is very lean. It also cook very quickly. If you’re making bacon for your burgers add some of the bacon grease. If not a touch of butter will help keep it from drying out. I’m not personally a fan of deer and garlic. It can over power the taste.

    I make deer minute steaks like a good ole Philly cheesesteak. I really enjoy it with a touch of salt and pepper and American cheese. Smoked Gouda or a cheddar would probably pair well.

    Anything you could do with ground beef really. Might need to add fat if you need it to hold shape (meatloaf or meatballs). As a burger there will be a strong difference, but with something like tacos or spaghetti where you add a lot of seasonings and spices its not too different (it is different though).
