Given the scales, it’s evident that it’s not even a true eel species, since those don’t have visible scales.

Grilled or some skillet/wok action. I know this is not unagi eel, but I’d just follow a recipe for that to get the sauce for it and approximate cooking time. Put it on some rice. Enjoy!

Fresh rice paddy eel (It has many names in English)
In Japanese it is known as field eel 田鳗 (ta-unagi)
These are delicious if cooked correctly, I like it braised with soy sauce or fried then braised with soy sauce.
I have also seen it cooked in a clay pot over rice but I never tried that. I have never cooked it either.
It is a fresh water eel which is raised alongside rice plants because they will eat bugs that eat the rice plants.
Optimally farmers use these eels in order to reduce or eliminate pesticide usage but sometimes farmers will use these eels along with normal pesticide levels which can lead to contamination of the eels.
