Cajun Alfredo sauce Heavy cream Parmesan Pepper Cajun seasoning, I used Slap Ya Mama Old bay Paprika
Brought heavy cream up to a gentle boil adding in parm and spices until thick seasoned to taste.
Mushroom Spinach mixture Sautéed chopped mushrooms in olive oil until moisture has evaporated. Added 3 cloves of minced garlic and sautéed for 40-60 seconds. Deglazed with dry vermouth. Removed and held from pan. Added spinach and another splash of vermouth and a splash of salted pasta water covered with lid and steamed to wilt. Added Cajun seasoning and removed and added with mushrooms.
Boil cavatappi pasta just under Al dente and then combine with Alfredo. Stir in mushroom and spinach mixture.
I used frozen crawfish tails. Defrosted and added in at the last minute. Poured pasta into casserole dish and topped with Mozzarella. Baked at 375 for 25 minutes and then turned broiler onto high to brown.
I’m sorry I don’t have exact measurements. But I season to taste. The spinach was a regular size bag from the grocery store. The mushrooms were half a container from Costco. The Crawfish were frozen tails from the local grocery store.
