Chipotle Mushroom Shredded Bowl

    **Salsa**

    * 1 tbsp fresh coriander
    * 1-2 tomatoes, seeds removed
    * 1 small red onion
    * 1 tbsp white vinegar
    * 1-2 tbsp lime juice
    * Pinch salt

    **Mushrooms**

    * 4 king oyster mushrooms, shredded
    * 1 tbsp olive oil
    * 1 tsp chipotle sauce
    * 1 tsp paprika
    * 1 tsp cumin
    * 1/2 tsp salt and pepper

    **Beans**

    * 1 cup black beans, rinsed
    * 1/2 tsp chili powder, cumin
    * 1/4 tsp salt and pepper
    * 3/4 cup hot water

    **Bowl**

    * 1 cup chopped lettuce
    * 1/2 cup sweetcorn
    * 1 tbsp mashed avocado
    * 1/2 cup lime and coriander rice
    * Hot sauce to serve

    ###Instructions

    1. Use a fork to shred the mushrooms into strips, once done add the a preheated pan on medium heat then press it down to release the water.
    2. Add oil, chipotle, paprika, cumin, salt and pepper then give it a mix. Once done remove it then add the beans, deglazed the pan with water and seasoning. Warm it through until hot.
    3. Add the salsa ingredients to a food processor and blitz, you want this still kinda chunky.
    4. Bring your bowl with rice, mushroom, lettuce, beans, sweetcorn, salsa, avocado then top with some hot sauce and enjoy!!
