what’s better for dinner than a casserole tonight I’m sharing three cheap and easy casseres to feed your family that won’t break the bank and when I say these are easy friends they’re some of the easiest ones I’ve ever made but they’re some of the most delicious ones I’ve ever made to so let’s get started okay ladies let’s put it together we’ve got the quickest dump and baked chicken Alfreda pasta ever first of all let’s get that oven preheating to 425° as usual we’re running on a skeleton crew here tonight so I’ve got about a cup of that shredded chicken in a greased 8 by8 casserole dish and when I say that chicken I mean these two chicken breasts that I threw in the crock pot with about half a cup of chicken broth I seasoned it with salt pepper onion powder and garlic powder cooked it about 3 or 4 hours then when you get home four or 6 hours later don’t judge me just going to shred that up in the crock pot if you want a little too long like me just throw a little more chicken broth in it it’ll be fine friends I’m going to put in this entire 14 and a half oz can of Alfredo actually it’s a jar and I just put about a half a cup of chicken broth in here to get the rest of my sauce out we’re dumping in 8 oz of an uncooked short pasta let’s pour in another cup of chicken broth and a nice big spoonful of garlic now let’s just get this mixed up a little bit and make sure that our chicken is mixed in and all of our pasta is buried underneath of our broth and our sauce this would be really quick and not very expensive to make a huge dish of this for a big family of course I’m halfing it but as always I’ll have you the full recipe linked down in the description box it’ll take you to my website where you can either print it off or pin it to your Pinterest board going to cover this really tight with some aluminum full put it in that oven for 30 minutes minutes bring it out and stir it if your pasta is not fully cooked by then cover it back up bake it another 10 minutes or so but if it’s ready to go we’re going to sprinkle on a big cup of mozzarella cheese and bake it 8 or 10 more minutes uncovered until it is nice and gooey and brown and delicious I put just a little parsley over the top of mine to give it a pretty little bright green and this was so delicious the flavor flavors were amazing that prgo garlic alfredo sauce was absolutely delicious and at the 30 minute Mark mine was just perfect my noodles had just a little bit of firmness left so I didn’t go any longer I just pulled my cover of foil off put the cheese on it and gave it 10 more minutes and it came out perfectly it was so easy so stinking easy you just set it and forget it basically in the oven of course you can use rotis chicken you can use canned chicken whatever you need to in here but it was amazing we had ours with a salad and I even splurged and made us some garlic bread tonight keep this one in your back pocket friends when you’re short on time you will not be short on got to do is thaw out my chicken here I forgot to do that this morning okie dokie I have my chicken all thaw out and number one I’m making about half of the size of this recipe because we don’t need the whole thing and number two with your chicken you want to use a really nice thin chicken breast because we don’t have to cook it before it goes in the casserole which is awesome I love that about this recipe but instead of leaving my thin sliced breast hole I like to cut them into chunks because I just think it makes this casserole a little bit easier to eat if you’ve ever gotten it at Cracker Barrel they just have a really big whole chicken breast under there and I just kind of like to serve it up more like a casserole where you can dish it out it just seems to make it a little bit more family friendly and your chicken can go a little bit further too like really one chicken breast might have been enough for us I’m going to go with this like 8 by8 C dish give it a little spray some of this avocado oil spray now I’m just going to put my chicken right down in the bottom of here let’s get it spread out just a little bit you could obviously just use some salt and pepper but I’m going to use a little bit of my anti no no it’s salt onion powder and garlic powder and let’s give it a little sprinkle of paprika too now we’re going to make the yummy stuff that makes it so great we’re using a can of cheddar cheese soup I’m just going to use about half of this can since I’m really cutting this recipe down I’m also going to put in a half a cup of milk a half of a teaspoon of paprika and don’t worry guys I will have you a recipe with exact measurements for the entire portion of this recipe on my website and a half a cup of cheddar cheese now that’s silly why couldn’t I just use the other half of that can of soup I didn’t really think that through h we’re just gonna go with it though all right let’s get this mixed together that’s a little runny to me plus to me this is just screaming for some sour cream so I’m going to put in oh this is probably a four a cup of sour cream let’s get it all mixed in now I’m going to take almost all of this cheese mixture I’m just going to save back maybe half a cup of it we’re going to do something on the top with it so let’s spread it out over our chicken now we’re just going to drop our broccoli in here and for my broccoli I took the large broccoli flowerettes I have and I just cut the stem off and then made them just as small of little pieces as I could because I like little bites of broccoli in every bite of my casserole you could also just use you a frozen bag of broccoli you would just want to let it get good and thawed out I’m just going to put a little bit all throughout here this is probably a cup or a cup and a half here’s all of our favorite casserole topping the good sleeve of Ritz crackers let’s get it crushed up now we’re going to sprinkle this right across the top and like most times when we use this or panco which you could also use normally we mix it with some butter and put it on here and we want it really crispy this time we’re not doing that but we’re going to take this remaining cheese mixture and put it on top of the crackers it will kind of help the crackers bake down into the casserole a little bit and if you think about it that’s kind of how Cracker Barrel does it isn’t it when I first read that in this recipe I was kind of skeptical about this step but I’m going with it and now we’re going to put this in a 350° oven for about 45 minutes and what’s awesome is you can go on about your evening you didn’t have to precook anything this smelled so good cooking I just could hardly wait for it to come out of the oven and it was so delicious I loved putting the cheese over top of the crackers Cracker Barrel was on to something there that’s why they have almost 700 locations nationwide here they know what they’re doing this was absolutely delicious I can’t wait to make this again and I will definitely make the full recipe next time this is a good one for family dinner night really inexpensive basic ingredients it’s just the way you put them together and definitely throw that sour cream in there too you are going to love this Tangy anchel casserole let’s preheat our oven to 350° I have a fairly decent size sweet onion here I’m just going to dice up about half of this onion I like mine to be in really small pieces we don’t need a whole lot because we are going to be putting in some salsa into this recipe and that’s going to have some onion in it but I do like the onion cooked up in my ground beef and speaking of that ground beef I’ve got a pound of it over here that’s almost browned up going to toss that onion in here we’re just going to finish cooking up our ground beef and letting this onion soften up a little bit I don’t know if you can tell I sort of let my hamburger meat get away from me here I am still learning this new stove going to toss in a nice little spoonful of garlic right here on the end before that garlic scorches on you you want to put in two cups of salsa and I love to cook with this chunky salsa from Aldi I think it has a great flavor it’s mild which you know I like things that are not too too spicy but I just think it has a really good flavor I like what it adds to a lot of dis dishes we’re also going to put in one can of black beans that have been rinsed and drained and I’m still loving these loow sodium black beans this is Publix’s brand I’m loving these they’re so good going to put in one envelope of taco seasoning just whatever kind you have or like then 1/4 cup of a bottled Italian dressing this is what makes this casserole so good tonight I’m using the wish bone Italian I wouldn’t recommend a creamy Italian like the Olive Garden you want it to be more like the zesty Italian or just a regular Italian dressing first time I made this casserole I thought the Italian dressing was such a strange Oddball ingredient to put in a TexMex casserole but honey it’s what makes it good I love it we’re going to get all this mixed in together and just let it simmer here for about 5 minutes tonight I’m going to use this spring form pan I haven’t used this in forever it also has an insert that can be used as a bump pan and also a little heart insert you can put in there and make heart-shaped cakes I’ve made exactly zero heart-shaped cakes or bump pans in this dish not a one that just goes to show you a lot of times all these little one and off pans that we get don’t always use them do we but I have used this before I’ve used it to make cheesecakes and I really like it I usually make this in a 2q Pyrex dish I’ll put a picture up here of what it looks like when I make it in that and it’s definitely fine to make it in that too but I’m anxious to try this giving it a good spray around the sides and the bottom and I have a soft taco siiz tortillas normally when I make this recipe I use three of them on each layer but tonight I’m just just going to use two first layer is going to be about half of our meat and bean mixture going to spread it out to the edges of our tortilla or almost to the edges maybe not all the way out there the next layer is going to be to spread out some sour cream and I’m using a little bit less than half of a cup and I’m just going to spread it out here and it’s okay if you get this mixture on your spoon I can get another one out for my next layer next we’re going to do about a half a cup of cheese I’m going to do a little cheddar cheese and also a little monterey jack I love this together now you’re welcome to use one of those like Mexican blend cheese or the queso quesadilla but to me this is not like a spicy queso type of dish I just think cheddar and Montery Jack is perfect here now I’m going to put two more tortillas down let’s put in the rest of our meat and Bean mixture I might be sorry that I’m using this spring form pan and not my Pyrex dish that holds everything in the sides we’re going to try it though I just think it would be so much easier to like cut it and stuff here comes that sour cream give it a little spread out and as it Cooks it’s going to spread on out so it doesn’t have to be perfect we’re just giving it a little head start here let’s top with some cheddar cheese and some beautiful jack cheese I’m going to put a little extra around the edges here we are going to put this in a 350° oven and I just remembered something about this spring form pan I need to put a Chic pan under it hang on wow that would not have been fun friends that would not have been fun now let’s put that in a 350° oven for about 15 to 20 minutes and now I’ll clean my mess up I’m a little under the weather if you can’t tell and I don’t know about y’all but when I’m I’m sick I can make the biggest mess when I don’t feel good and I’m cooking I can make a big old mess y’all could see me right now you would click off this video and you would run as fast as you can far far away it’s bad around here I like to turn mine on BR for just a few minutes to get it nice and brown on the top going to need to let that stand for about 5 or 10 minutes before we cut into it it looks wonderful it smells wonderful let’s see if I can even remember how to get this thing on off here I forgot there we go yeah you just undo it and it slides open kind of mess I got myself in hey not too bad I definitely could have went three layers this time definitely could have went three layers just cut us a big pie section out of here see what we got did I get it cut good wow that smells and looks so good this is so delicious it’s one of those recipes it’s not much to look at but you’re just going to have to take my word for it and give it a try it is so good put any kind of Taco like toppings that you want on the top and I didn’t tell you guys the reason why I went down from three tortillas to two in each layer is because they seem to get tough the last time I made this just using two on each layer definitely helped didn’t have any toughness in them at all and I forgot I usually cover this when I bake it too so maybe that helped I cooked it uncovered this time it’s definitely delicious it’s one of our favorites and you can see here it did start to come together the longer it sits there and it gets cold it’s going to come together just fine but
