Some fine beans cooked in olive oil and fresh tomatoes with rice. I think beans lose a bit of nutrition from getting cooked halt a hour but they were still tender and nice. This is breakfast/lunch for me and I cannot eat much during this time of the day

  1. Fasolakia, one of my favorites. i usually add onion, parsley, potato (sweet or russet), garlic. I like the rice idea, will definitely try subbing out the potato for rice.

    – 3 4 cherry tomatoes
    – optional 1 sugar cube
    – 2 tbsp evoo
    – 1 handful of fine green beans
    – 1 garlic clove

    Sautate chopped down tomatoes and sliced garlic clove a bit in evoo, add green beans and a bit of hot water (until halfway through of covering the beans). Cook it in medium to high until boiling. Cover it and let it cook for half a hour in medium heat. Check on it every 15 mins or so. Beeans should be a bit softened and paler. Take it off the heat and serve it with additional olive oil if wanted.

    1 cup of basmatic rice is cooked in 1 to 1+1/2 water ratio. If wanted, you can flavor it by cooking it in vegetable stock. I really think the meaty flavor disturbs the taste of green beans. Its a very light and fresh dish, can be eaten cold and great in hot weather
