I asked for help a few days ago because my carbonara was a little bit scrambled, your tips has helped me a lot so far.
Here are what I did to change the result:
I fried the guanciale on medium heat, and then after it becomes crispy and all the oil came out, i took them out and leave the oil to cool in the pan.
i took some pasta water (2 scoop around 4 tbsp) and mix it with the egg and cheese mixture.
Then i transfer the pasta into the semi cooled down pan and stir a bit, i add in around 2 tbsp of pasta water and the mixture, it was still kinda hot so it almost scrambled so i have to take the pan somewhere cooler lol.
The end result is as you see, so good and creamy. it is a bit creamy for my taste so i think i will put in a little bit less cheese and a little bit more pasta water next time. I cook when eyeballing things so I apologize for not having the exact measurements xD.
Anyways thank you for your help this is my first time making such a successful carbonara without any cream added but still creamy and silkyy.
