Late to the Lima party by many years but here were some standout dishes at Maido’s 15 year experience.
1 – Peruvian mushroom and dehydrated vegetables used as a teabag for dashi broth
2 – waygu on crispy rice topped with quail egg injected with ponzu sauce
3 – foie gras with Peruvian potato powder
4 – Guinea pig with dipping sauce
5+6 – ramen using squid as noodles
7+8 – toro tableside over uni

Nice to see it’s switched up a bit since I was there in December
What were your thoughts? I went Thursday, got food poisoning halfway through, and can confidently say it was the worst meal we had in Perú.
