    we will age it for 48 hours, at 7°-8° then we will break down into proper cuts.

    first “large” livestock we have butchered on-site, ourselves. we’ve done some small pigs, tons of rabbits and birds but this was a first.

    I will try to show some finished cuts when done. 

    for the record: I’m using the “managerial we” here. my wife does 80% of this from birth to freezer. I help with lots along the way, but she full time farms, and I earn outside the home 40 hrs. we team it on weekends and evenings.
