I'm trying to get into cheeses but I still have virtually no knowledge of them, but this guys moldy covering is safe to eat right? Just making sure I don't need to take it off before eating 🙂

what kind of cheese is this.

Generally speaking, yes. If you don’t like it, though, don’t eat it. I eat the rind on most bries, but there are some Camembert cheeses that I don’t eat the rind.

It’s safe, you can eat it, but eating the rind is optional and depends on personal tastes

That could be Pleine Lune.

You are def not eating camembert…. this is probably the [Ashley – MouCo Cheese Company](https://www.mouco.com/ashley/)

Looks like ash-ripened goat cheese

It’s not mold. It’s coloring from the “wash” process they use on this cheese. It’s totally edible.

If you’re interested, start looking into washed rinds and ashes rinds, and how they work with different cheeses. There’s so many out there!

It’s fine, the rind is healthy and it’s obviously got a coating of ash. Even so, rind is not meant to be eaten as it does sometimes capture mold, Just cut the bits and enjoy!!

That looks like an ash rind, not a mold.

That is an ash coating on the outside of the cheese which becomes the rind. It is perfectly edible. Ash is used traditionally with goat milk cheeses as it tones down the acidity in the milk.
Most rinds are edible, unless they are made of wax.
