You typically only hear about Vollmers when it comes to New Nordic fine dining in Malmo, so I wanted to try something different. Overall, a very enjoyable meal. Service was warm, flavors were great, the wine pairing was outstanding (one course came with a skin contact, spon fermented Riesling that sat in a barrel for 5 years before bottling. I fell in love with the wine and am desperate trying to find a case of it back home in the states), but the pacing was slowwwww. 7 courses took over 3 hours. All in all, a very good experience though. Would eat there again.
Top dishes for me were the arctic char crudo with horseradish (photo 2), halibut with green garlic (3), and the Langoustine dumplings with mushroom and langoustine head foam (5). The foam was an umami bomb. I could have had a mug of it.
