This wasn’t a single recipe, but a combination of several. My goal was to recreate a PieCaken I saw online, but at a more manageable 6in size.
Apple Topping
1 tablespoon butter 1 apples, peeled, cored, and diced 1 tablespoons brown sugar 1/4 teaspoon cinnamon 1/4 tsp cornstarch
Add butter, diced apples, brown sugar, and cinnamon to a medium saucepan. Stir the mixture over medium heat for about 3-5 minutes, or until the apples are very tender. Add cornstarch and mix.
Pumpkin cake
1/2 cup all-purpose flour, sifted 1/2 teaspoon baking powder 1/4 teaspoon baking soda 1/2 teaspoon ground cinnamon 1/4 teaspoon ground nutmeg 1/4 teaspoon ground ginger 1/4 teaspoon salt 1/2 cup canned pumpkin puree 1/4 cup vegetable oil 1/4 cup packed brown sugar 1/4 cup granulated sugar 1 egg, room temperature 1/2 teaspoon vanilla
Preheat oven to 350F. Lightly grease one 6-inch round cake pan, then line the bottom with parchment paper. In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt. In another large bowl, beat together the pumpkin, oil, brown sugar, sugar, egg, and vanilla. Gradually add the flour mixture to the pumpkin mixture. Mix together until incorporated. Transfer the batter to the cake pan. Bake for 22-25 minutes or until a toothpick inserted in the center comes out clean. Cool for 15 minutes, then invert cake onto cooling rack. Cool completely.
Pumpkin pie
For the crust: 1/2 Pillsbury crust
For the filling: 2 oz cream cheese (softened) 1/2 cup canned pumpkin 1/4 cup sugar 1/8 tsp salt 1 egg, slightly beaten 2 Tbsp milk, half & half, or heavy cream 1 Tbsp butter (melted) 1 tsp vanilla extract 1/4 tsp ground cinnamon 1/2 tsp pumpkin pie spice
In a large mixing bowl, beat the cream cheese with a hand mixer. Add the pumpkin and beat until combined. Add the sugar and salt, and beat until combined. Add the egg mixed with the milk (half-and-half or cream), and 1 tbsp melted butter, and beat until combined. Finally, add the vanilla, cinnamon, and pie spice and beat until incorporated. Pour the filling into the prepared pie crust. Bake for 60 minutes or until the center is almost set. It will be puffed up but will settle as it cools. Place the pie on a wire rack and cool to room temperature.
Pecan pie
For the crust: 1/2 Pillsbury crust
Filling: 1/4 cup corn syrup 1 egg 1/4 cup sugar 1 pinch salt 1 tablespoon salted butter , melted 1/2 teaspoon vanilla extract 1/2 cup pecans
Mix corn syrup, egg, sugar, salt, butter and vanilla in a bowl using a spoon. Stir in the pecans. Pour filling over crust. Bake on center rack of oven for 30 minutes at 350 Remove from oven and let pie cool on wire rack for a 2 hours
Cinnamon whipped cream cheese frosting
1 cup heavy cream 6oz cream cheese 2 tbs butter 2 cups powdered sugar 1 tsp vanilla 1/4 tsp Cinnamon
Whip cream until stiff peaks form. Cream softened butter and cream cheese. Add sugar, vanilla, cinnamon. Fold whipped cream into mixture.
