What is this white residue on my jars after pressure canning stock?

Mineral deposits from the water you’re using.
Add some white vinegar to the water in the canner.
After the jars are removed and cooled a bit, wipe them with vinegar on a paper towel.

Likely it’s from hard water. Add a splash of vinegar in the canner next time and that should help!
